2 egg whites
8 ounces heavy cream
3 egg yolks
6 tablespoons sugar
8 ounces Mascarpone Cheese
2 tablespoons Cognac
1 1/4 pounds canned peach halves, drained or fresh peaches
2 ounces Amaretti cookies
Beat the egg whites until stiff. Whip cream until it peaks. Beat the egg yolks with the sugar until nearly white. Add the Mascarpone Cheese and mix well. (Use an electric hand mixer for these four operations.) With a rubber spatula, fold the Cognac into the mixture. Then gently fold in the whipped cream and beaten egg whites. Cut the peaches into little cubes and add to mixture. Crumble the Amaretti cookies and gently stir into the Mascarpone mixture. Pour the peach cream into a serving bowl and refrigerate for at least 2 to 3 hours before serving. If available, instead of canned, used peeled and pitted ripe fresh peaches, sliced very thin. Makes 10 servings.
