1 cup Bulgar wheat 6 scallions, chopped 2 tablespoons chopped mint 1/4 cup chopped parsley 3 tablespoons olive oil 1/4 cup freshly squeezed lemon juice Salt and pepper to taste To serve: 1 small romaine lettuce
Place the bulgar wheat in a bowl, cover with cold water and leave to soak for 30 minutes. Squeeze out the water with your hands and place in a bowl. Mix in the remaining ingredients. Arrange the lettuce and Tabbouleh in individual serving bowls. Use the lettuce leaves to scoop up the salad. Serves 4. Critics rate "As the Mouse Moves" as HOT!
