Chef's Daily Recipe for 07/21/03 : Pasta in Mushroom Sauce
"Pasta in Mushroom Sauce"

8 oz. Button mushrooms
1 oz. Butter or margarine
1 oz. Flour
1 pint milk
Salt and freshly ground black pepper
10 oz. Pasta shells
Rinse the mushrooms and chop them roughly. Melt the butter in a saucepan and add the mushrooms. Fry for 5 minutes, stirring constantly. Stir in the flour and cook for 1 minute. Take pan from heat, and add the milk gradually, stirring continuously. Return to the heat and bring to a boil and cook for 3 minutes, stirring continuously. Season with salt and pepper. Meanwhile, cook the pasta shells in plenty of salted water for 10 minutes, or until al dente. Rinse in hot water and drain. Place in serving dish and add the mushroom sauce. Serves 4.
