1 cup dry white wine 3 tablespoons wine or cider vinegar 1 onion, sliced thinly 1 carrot, sliced 1 bay leaf Bouquet garni of thyme, parsley and dill 6 small herrings, heads removed and boned Juice of 1 small lemon Salt and pepper to taste Dill sprigs to garnish
Place the wine, vinegar, onion, carrot, bay leaf and bouquet garni in a pan and bring to a boil. Simmer, uncovered, for 5 minutes. Meanwhile, season the flesh of the fish with salt and pepper and sprinkle with lemon juice. Roll up each herring from the neck to the tail and secure with a wooden cocktail stick. Place the rolled herrings in a shallow ovenproof dish and pour over the wine mixture. Cover with foil and cook in a 425 degree oven for about 15 minutes or until cooked. Leave in the marinade to cool overnight. Remove the rolled herrings from the marinade with a slotted spoon and transfer to individual serving plates. Garnish with dill sprigs and serve with thinly sliced whole wheat bread. Serves 6. Critics rate "As the Mouse Moves" as HOT!
