"Bean Salad with Cauliflower"

1/2 lb. Cauliflower florets
15 oz. Can white kidney beans, drained
4 scallions, sliced
1 tablespoon poppy seeds
Salt and pepper to taste
Dill sprigs to garnish
Dressing:
3 tablespoons sour cream
1 tablespoon mayonnaise
1 small apple, peeled and grated
1 tablespoon chopped parsley
Blanch the cauliflower in boiling water for 2 minutes. Drain and place in a serving bowl with the beans and scallions. Mix all the dressing ingredients together; season with salt and pepper. Pour over the salad and toss well. Sprinkle with poppy seeds and garnish with dill. Serves 4 to 6.
