Chef's Daily Recipe for 07/16/03 : Ice Cream with Honey and Pine Nuts
"Ice Cream with Honey & Pine Nuts"

2 tablespoons clear honey
6 egg yolks
18 fl. Oz. Milk
1 oz. Pine nuts
Whisk the honey and the egg yolks together for 1 minute. Bring the milk to a boil, and pour over the egg mixture, whisking continuously. Rinse the saucepan and pour the mixture back into the pan, add the pine nuts and place over a very low heat. Stir continuously, until the custard thickens and will coat the back of a spoon. Allow to cool and then pour into the bowl of an ice cream maker and freeze. Spoon into a container and keep in the freezer until needed. Alternatively, part freeze the mixture in a bowl, whisk until smooth then refreeze. Whisk and freeze in a covered container until firm. Serves 4.
