1 ripe papaya, peeled, seeded and cut into chunks
1 large pear, peeled, cored and cut into chunks
2 large grapefruit, peeled and cut into segments
1/2 honeydew melon, peeled, seeded and cut into chunks
1/3 cup vinaigrette dressing
1 tablespoon chopped mint
Mint sprigs for garnish
Mix the fruits together in a bowl. Pour over the dressing, sprinkle with the mint and toss well. Transfer to small glass dishes and chill. Garnish with mint. Serves 4.
