1/2 cup peanut oil
1 - 3 1/2 pound chicken, cut into 8 pieces
2 cups chopped onions
1/2 cup creamy peanut butter
1/4 teaspoon cayenne pepper
Salt
2 cups water
Chopped peanuts
Heat oil in a heavy large skillet over medium high heat. Add chicken and cook until browned and tender, turning occasionally for about 25 minutes. Transfer chicken to a platter. Pour off all but 2 tablespoons drippings. Add onions to the skillet and cook until soft, about 5 minutes. Stir in peanut butter, cayenne pepper and salt. Gradually mix in water. Return chicken to pan. Simmer until sauce thickens slightly. Transfer to serving platter. Garnish with chopped peanuts. Peanut Butter Chicken serves 4 to 6. Serve with rice.
