3 cups cubed cooked chicken
1 8-ounce can sliced water chestnuts, drained
4 hard cooked eggs, coarsely chopped
1/2 cup sliced green onions
1 cup sour cream
2 teaspoons sugar
2 teaspoons curry powder
2 teaspoons fresh lemon or lime juice
1/2 teaspoon ground ginger
1/4 teaspoon freshly ground white pepper
1/4 pound fresh or thawed frozen snow peas, strings removed
Lettuce
2 hard cooked eggs, sliced
Lemon or lime wedges
Parsley sprigs

Mix the chicken, water chestnuts, 4 chopped eggs and green onions in a large bowl.  Combine sour cream, sugar, curry powder, lemon juice, ginger and pepper in a small bowl. Pour over the salad and toss.  Cover the salad and refrigerate for 24 hours.  Cook snow peas in boiling water to set color. Drain and pat dry. Add peas to salad and toss. Line a serving bowl with lettuce.  Mound salad in bowl. Garnish with sliced eggs, lemon and parsley.  Serve chilled. Salad serves 4 to 6.
