"Pasta with Spinach and Cheese"

Salt
1 pound frozen chopped spinach, thawed
1 pound Penne
1/2 pound Gorgonzola
2 ounces Mascarpone
1 ounce grated Parmesan cheese
Pepper
Bring 4 quarts of water to a boil. When boiling, season with 1 1/2 tablespoons of salt, and then add the spinach. Cover the pot and let the water come to a boil again. Add the pasta, and let cook al dente. Stir often. Meantime, put the Gorgonzola, cut into small pieces, Mascarpone, and the Parmesan cheese into a heatproof dish. Work the cheese together well with a fork and season with pepper. When the pasta is done, drain well with the spinach, reserving 1 cup of the boiling water. Pour the pasta and spinach into the bowl with the cheese, toss well, and put over the heat for a couple of minutes, tossing well.
Serves 6.
