Chef's Daily Recipe for 06/19/03 : Spaghetti with Tomato Sauce
"Spaghetti with Tomato Sauce"

1 lb. Spaghetti
3 tablespoons olive oil
1 clove garlic, chopped
3 tomatoes, peeled, seeded and chopped
Salt and freshly ground black pepper
10 fresh basil leaves, finely chopped
Cook the spaghetti in boiling water according to instructions on package. Rinse and drain. Heat the olive oil in a frying pan and cook the garlic, tomato, salt and pepper over a gentle heat for 10 - 12 minutes, stirring frequently. Stir the well drained pasta into the sauce, mix well, and re-heat the spaghetti. Just before serving, stir in the finely chopped basil, season with extra salt and pepper if necessary, and serve. Spaghetti in Tomato Sauce serves 4.
