4 pieces of 6 ounce, 1 inch thick swordfish steaks
2 1/2 tablespoons lime juice
Salt and freshly ground pepper
1/2 cup (1 stick) butter
1 garlic clove, minced
3/4 cup fresh cilantro, finely chopped
1/2 teaspoon dried red pepper flakes
Lime wedges
Prepare barbecue or preheat broiler. Melt the butter in heavy small saucepan over medium heat. Add garlic and cook 30 seconds. Mix in cilantro and pepper flakes and cook until cilantro is heated through, about 1 minute. Grill swordfish until just opaque, about 7 minutes per side, basting frequently with cilantro butter. Serve with lime wedges. Serves 4.
