8 equal sized fillets of sole 2 cups sliced mushrooms 1 cup white wine 1 teaspoon butter 3/4 cup skim milk blended with 1/4 cup non-fat powdered milk 1 tablespoon flour 2 teaspoons tarragon Salt and pepper to taste 1 teaspoon lemon juice
Preheat oven to 400 degrees. Spray baking pan with non-stick oil. Place 4 fillets in pan, cover with mushrooms, then place second fillet over mushrooms. Pour wine in pan. Poach in oven 15 minutes. Remove pan and drain juices into saucepan. To cooking juice in saucepan, whisk in butter, milk, flour, tarragon, salt and pepper. Rapidly boil down until consistency of heavy cream. Remove from heat and stir in lemon juice. Spread sauce over fillets. Return to oven 6 - 7 minutes, to heat through. Serves 4. Critics rate "As the Mouse Moves" as HOT!
