4 chicken breasts or 2 small frying chickens
4 slices of ham
4 slices Gruyere or Cheddar Cheese
A little seasoned flour
2 Eggs
Breadcrumbs
Oil for frying

If using frozen chicken breasts allow them to defrost at room temperature. If using whole chicken, cut away the breasts with a sharp knife. Slit the breast lengthways so you have 8 slices in all, then sandwich these with ham and cheese.  Dip in seasoned flour then in egg and breadcrumbs.  Fry until crisp and golden brown in hot fat, then lower the heat and cook steadily for about 15 to 20 minutes. Drain on paper towels.  Serves 4.
