1 1/3 cups dried white beans
4 potatoes, peeled
2 carrots, chopped
2 onions, chopped
1 celery stalk chopped
2 tablespoons tomato paste
1/2 pound rind or salt pork
1/4 cup olive oil
Salt
Freshly ground pepper
Dash olive oil
12 slices of home made bread, toasted
Soak the beans in water overnight. The following morning, put them in a large kettle with the peeled whole potatoes, chopped vegetables, tomato paste, bacon rind or salt pork and olive oil. Bring to a boil, reduce the heat and simmer gently for about 3 hours. The salt should then be added. Remove the potatoes and two thirds of the beans with a slotted spoon and put through a food mill back into the pot. Before removing the soup from the stove, test seasoning, grind in pepper and add a dash olive oil. Serve soup with slices of toast. Serves 6.
