1/4 cup butter or margarine
3/4 cup brown sugar
1 egg
1 3/4 cups flour
1/4 cup wheat germ
1 teaspoon baking powder
1/2 teaspoon salt
1 (6 ounce) can frozen orange juice concentrate
1 (8 3/4 ounce) can crushed pineapple
1/2 cup chopped pecans
Preheat oven to 350 degrees. Cream butter and sugar together until light and fluffy. Add egg; beat well. Sift together flour, wheat germ, baking powder, and salt. Thaw orange juice concentrate and add alternatively with flour to the creamed mixture. Add pineapple and nuts; stir into batter. Place in a greased and floured 9 inch loaf pan; Bake for 60 minutes or until done.
