2 pounds boneless pork loin, cut into 1 inch pieces 3/4 teaspoon salt 1/2 teaspoon pepper 2 tablespoons olive oil 1 medium onion, chopped 2 large bell peppers, red and yellow, cut into 1 1/2 inch squares 1 - 14 ounce can Italian peeled tomatoes, drained and chopped 2 tablespoons chopped fresh basil or 1 teaspoon dried 1 tablespoon chopped fresh parsley
Trim excess fat from pork. Season with salt and pepper. In a Dutch oven, heat olive oil over medium high heat. Add pork and cook, tossing 3 to 5 minutes, until lightly browned on all sides. Add onion and bell peppers and cook 2 to 3 minutes, or until onion is softened. Add tomatoes and bring to a boil. Reduce the heat to low, cover, and cook 20 minutes or until pork is tender.
