2 tablespoons butter
1 large carrot, chopped
1 onion, chopped
1 leek, white part only, chopped
1 celery stalk, chopped
1 1/2 cups chopped mushrooms
1/4 cup dry white wine
1 1/4 quarts chicken stock
2 teaspoons dried thyme
1 bay leaf
1/2 cup lentils
3/4 cup diced turkey meat
Salt and freshly ground black pepper
Melt the butter in a large saucepan. Add the carrot, onion, leek, celery, and mushrooms and cook for 3 to 5 minutes or until golden. Stir in the chicken stock and wine and bring to a boil. Skim off any foam from the surface with a spoon. Add the thyme and bay leaf. Lower the heat, cover and simmer for 30 minutes. Add the lentils and continue cooking, covered, for 30 to 40 minutes longer until they are just tender. Stir the soup occasionally. Add the turkey and season to taste with salt and pepper. Cook until just heated through. Serves 4.
