5 cups all purpose flour
1 1/2 cups granulated sugar
3 teaspoons baking powder
4 eggs
3/4 cup milk
2 teaspoons vanilla extract
2 cups sifted confectioners' sugar
1/4 cup cream
1 teaspoon lemon juice

Preheat the oven to 350 degrees. In a large bowl, combine flour, granulated sugar and baking powder. Stir with a wooden spoon to mix.  Make a well in the center. In a small bowl, beat eggs just enough to combine. Stir in milk and vanilla. Pour milk mixture into well in center of flour.  Beat with a wooden spoon until a soft dough forms. Cover with a kitchen towel and let rest 15 minutes.  Divide dough into five pieces.  On a floured work surface, roll each piece into 1/2 inch thick rope. Cut into 3 inch lengths and tie each into a loose knot. Place on a baking sheet and bake 12 to 15 minutes, until dry and still pale in color.  Partially cool cookies.  While Biscotti are cooling, in a medium bowl combine confectioners' sugar, cream, and lemon juice, beating with a fork until sugar dissolves and mixture is thoroughly blended.  Dip tops of warm cookies into sugar glaze and set on a cookie sheet to dry. Makes 3 1/2 to 4 dozen cookies.
