Chef's Daily Recipe for 11/13/02 : Apple Custard

5 cups of soft bread crumbs (white bread with crusts removed)
2 cups of buttermilk
2 cups regular milk
3 pounds firm tart apples, peeled, cored and thickly sliced
1/4 cup water
1/2 cup unsulphured molasses
1/3 cup sugar
4 eggs, lightly beaten
3/4 teaspoon ginger
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Place the bread crumbs in a bowl and pour the buttermilk and regular milk over crumbs. Set aside. Preheat the oven to 350 degrees. Place the apples and water in a skillet. Cover and cook gently until the apples start to soften but still retain their shape. Cool slightly. Beat the remaining ingredients into the soaked bread mixture. Fold in the apples. Pour into a greased three quart casserole or baking dish. Bake for 50 to 60 minutes, or until set. Serve warm. Serves 10.
