1 lb. Veal liver, sliced into 2 inch pieces 1/4 cup all purpose flour for coating 1 tbsp. Green Olive Oil 1 tbsp. Sweet unsalted butter 1 tsp. Italian herb seasoning 2 tbsp. Small capers Black pepper to taste 1/2 cup lemon juice, freshly squeezed 1/4 cup fresh Italian parsley, chopped
Coat the liver lightly in the flour. Put the liver in a large frying pan with the oil and butter and sauté for about 5 minutes. Add the Italian herb seasoning, capers, black pepper, and lemon juice, and sauté for 3 minutes. Sprinkle with the parsley and serve with rice or polenta. Serves 4.
