2 cups oysters 4 cups milk, scalded 1/4 cup butter 1 1/2 teaspoons salt 1/4 teaspoon freshly ground black pepper
Strain the liquor from the oysters through cheesecloth into a saucepan. Pick over the oysters for shell or grit and clean if necessary. Bring the oyster liquor to a boil. Add the oysters, bring to a boil and simmer just until edges curl, about 4 minutes. With a slotted spoon, remove the oysters. If they are very large, quarter them. Add the milk and butter to oyster liquor. Season with the salt and pepper and return oysters. Reheat and serve immediately. Serves 4.
