1 lb. Pasta (Ziti, Fettuccine, Penne or Rotini) 1 cup skim milk ricotta cheese 1/2 cup Parmesan cheese, freshly grated 1/4 cup fresh Italian parsley, chopped 1 tsp. Dried basil or 4 fresh basil leaves, minced Dash of white or cayenne pepper 1 cup fresh tomatoes, peeled and diced
Boil the water to cook the pasta. In a small saucepan, heat the ricotta and Parmesan cheese for 3 minutes; stir often to blend the cheese, parsley, basil, and pepper to keep from becoming lumpy. Remove from heat. Drain the pasta and transfer it to a large pasta bowl. Add the tomatoes. Toss the pasta with the ricotta sauce and add more Parmesan cheese on top. Serve immediately.
