4 medium size lamb chops 1 tsp. Italian herb seasoning 5 cups Italian red wine 3 cloves of garlic, cut lengthwise in slivers 1/4 cup green olive oil 4 carrots, thinly sliced lengthwise 4 stalks of celery 4 small onions, peeled whole 1 bay leaf 1/4 tsp. Ground Nutmeg 4 sprigs of fresh rosemary; or 1/2 tsp. Dried Rosemary
Rub the lamb chops with the Italian herb seasoning. Marinate overnight in the red wine; embed thinly sliced pieces of garlic in the meat. (Make a small cut in the lamb with the pointed tip of a sharp kitchen knife, and push the garlic sliver down into the meat.) Make sure that both sides of the meat are covered by the wine. Warm the olive oil in a large skillet, and add the marinated meat and the vegetables; sear the meat on both sides. Add the red wine marinade. Arrange the whole onions around the lamb chops and add the bay leaf and nutmeg. Put a lid on the skillet and simmer slowly for about 75 minutes, until the meat is tender. After the meat has been cooking about 30 minutes, add sprigs of rosemary. Serve with pasta, polenta or rice. Serves 4. Critics rate "As the Mouse Moves" as HOT!
