1 teaspoon light olive oil 4 tablespoons chilled butter, cut into small pieces 1 cup all purpose flour Pinch of salt 1/4 cup plus 1 tablespoon ice water 2 large baking apples, such as Golden Delicious, peeled, cored and sliced paper thin 2 tablespoons honey 1 tablespoon lemon juice 3 sprigs of fresh thyme or 1/4 teaspoon dried thyme leaves
Preheat the oven to 400 degrees. Brush the olive oil into a thin film on a cookie sheet without sides. In a food processor, pulse the butter, flour and salt together until a coarse meal forms. Add the water and process only until the dough begins to form a ball. Flatten the dough ball into a thick even disc. Cover with plastic wrap and refrigerate at least 30 minutes. Roll out the dough directly on the oiled cookie sheet into a 13 inch circle. Toss the apples, honey and lemon juice in a bowl. Arrange the apples slices in a single layer in slightly overlapping circles, leaving a 1 inch border around all. Fold the dough border over the apples to form an edge on the tart. Pour any remaining lemon honey juice from the bowl over the apples and sprinkle the thyme on top. Bake 1 hour, or until the crust is golden and the apples are tender. Serve warm. Serves 8.
