"As we graze it grows"

1 1/2 cups fresh whole wheat breadcrumbs
1/2 cup Parmesan cheese, freshly grated
1/2 teaspoon Italian herb seasoning
2 cloves of garlic, crushed
1 medium size onion, finely chopped
4 tablespoons fresh Italian parsley, chopped
Black pepper to taste, freshly ground
4 medium size artichokes, washed, stalks trimmed and cold leaves removed
3 tablespoons green olive oil
1/2 cup lemon rind

In a large mixing bowl, combine the breadcrumbs, Parmesan cheese, Italian herb seasoning, garlic, onion, parsley, and pepper. Spread the leaves of each artichoke and fill the space between with the breadcrumb mixture.  Press it down firmly with the back of a spoon. Place the stuffed artichokes in a heavy based pan large enough to hold them upright. Pour 1/2 tablespoon of olive oil over the top of each artichoke. Add water to half the height of the artichokes and add the lemon rind. Bring the water to a boil, cover the pan tightly, and reduce the heat. Simmer gently for 35 to 45 minutes or until the outer leaves of the artichokes can be easily removed. Take the artichokes from the water and serve hot or at room temperature.  Serves 4.
