4 medium size chicken breasts, de-boned and diced 1 lb. Short shape pasta such as Penne, Ziti or Rigatoni 3 tablespoons green olive oil 1 cup shallots, or onions, chopped 3 red peppers, roasted and diced (see below) 3 cloves of garlic, crushed 1/4 teaspoon red pepper, crushed 2 cups arugula leaves, diced into 1 inch pieces (you can use spinach, rapini, or Swiss chard) 1/2 teaspoon Italian herb seasoning 1/4 teaspoon thyme 4 tablespoons Romano cheese, freshly grated
To roast peppers, wash, dry and remove seeds. Arrange cut side down in a single layer on broiler pan or cookie sheet. Broil for 10 minutes or until the peppers are charred and blistered, then peel. Flatten and dice the chicken breasts into 1/2 inch cubes. Boil the water for the pasta. In a large frying pan or wok, combine the oil, onions, peppers, garlic, and chicken cubes. Sauté for about 5 minutes, stirring often. Add crushed pepper, arugula leaves, Italian herb seasoning, and thyme. Cook for another 3 to 5 minutes, stirring to blend thoroughly. Cook the pasta and drain; transfer it to a large pasta bowl or wok. Stir in the sauce and Romano cheese, and blend well. Serves 6. Critics rate "As the Mouse Moves" as HOT!
