"Gnocchi with Ricotta Cheese"

1 1/2 cups skim milk ricotta cheese
1 1/4 cups all purpose flour
1/2 cup Parmesan cheese, freshly grated
2 eggs, beaten
Pinch of nutmeg
1/2 cup fresh Italian parsley, finely chopped
Dash of White pepper
2 egg yolks
Put all the ingredients in a large bowl and blend together to form a smooth dough. Knead well. Roll the dough into 2 long, thin stick shape forms. Keep your hands and the board floured. Cut into short pieces about 1/4 inch long. Let the gnocchi stand for 30 minutes. Cook the gnocchi in boiling water for 2 to 3 minutes. Remove from the pan with a slotted spoon and place in a warm bowl. Serve with butter and Parmesan cheese or Marinara sauce.
Gnocchi serves 4.
