"As we graze it grows"

1 cup shortening
3/4 cup granulated sugar
1 egg
1 cup mashed cooked carrots, cooled
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
Frosting:
1/4 cup orange juice
1 tablespoon grated orange rind
Confectioners sugar

Preheat the oven to 350 degrees.  To prepare cookies, cream the shortening and granulated sugar together until light and fluffy.  Beat in the egg.  Beat in the carrots and the vanilla; sift together the flour, baking powder and salt and stir into the batter. Drop by teaspoonfuls, two inches apart, onto a greased baking sheet.  Bake twenty minutes, or until done. Cool on a rack. To prepare frosting, combine the orange juice, orange rind and enough confectioners sugar to make a spreading consistency.  Spread over the cooled cookies.  Yields 30 cookies.
