"As we graze it grows"

3/4 cup sugar
2 tablespoons milk
5 egg yolks
1 tablespoon grated lemon rind
3 tablespoons lemon juice
3 egg whites, stiffly beaten
1 baked nine inch pie shell

Preheat the oven to 400 degrees.  Combine one half cup of the sugar, the milk and egg yolks in the top of a double boiler. Cook over hot water, stirring, until thickened. Stir in the lemon rind and lemon juice and remove from heat. Pour the mixture into a mixing bowl and let cool. Fold the egg whites and remaining sugar into the mixture and pour into the pie shell.  Bake 8 to 10 minutes. Serves 8.
