Chef's Daily Recipe for 09/27/02 : Seafood Risotto

2 cups onion, diced
2 cloves of garlic, crushed
1/2 teaspoon crushed red pepper
2 tablespoons green olive oil
1 1/2 cups Italian Arborio rice
1 cup warm water
2 cups dry white wine
1 cup Italian plum tomatoes with juice, crushed
1 tsp. Italian herb seasoning
2 cups fresh seafood, diced (clams, mussels, lobster, shrimp, crabmeat, or pieces of whitefish)
1 cup fresh Italian parsley, chopped
In a large casserole or skillet, sauté the onion, garlic, and pepper flakes for a few minutes in the oil. Add the rice and 1/2 of the water and wine; cook the rice for 20 minutes adding the remaining water, more if necessary, and wine. Add the tomatoes, Italian herb seasoning, and seafood; cook for 5 minutes stirring continuously. Do not overcook the seafood, it will become tough and chewy. Sprinkle with parsley and serve immediately. Serves 4.
