"As we graze it grows"

1/2 cup white bread cubes
12 large mushrooms
2 cloves garlic, finely minced
2 tablespoons chopped parsley
Salt and freshly ground black pepper to taste
2 eggs
1/2 cup ricotta cheese
1/4 cup olive oil
1/4 cup grated Parmesan cheese

Preheat the oven to 400 degrees.  Soak the bread cubes in water;  then squeeze dry.  Shred into a mixing bowl. Chop the mushrooms stems and add to bread crumbs along with the garlic, parsley, salt, pepper, eggs and ricotta cheese.  Blend well. Stuff mushrooms with filling and arrange them cap side down, on a dish.  Rub mushrooms with some of the oil.  Sprinkle the remaining oil and the Parmesan over the mushrooms. Bake for 20 minutes.  Serves 6 appetizers.
