"As we graze it grows"

2 cups skim milk ricotta cheese
1/4 cup prosciutto, diced
1/2 teaspoon nutmeg
1/2 cup Italian parsley, finely chopped
3 eggs
2 cups safflower oil
1 cup toasted plain breadcrumbs
1/4 cup Parmesan cheese, freshly grated

Mix all ingredients except breadcrumbs, oil, and Parmesan cheese in a large bowl.  Form into small balls.  Roll in breadcrumbs that are mixed with 3 tablespoons of Parmesan cheese.  Heat the oil in a saucepan; when hot, drop in the ricotta balls cook for 3 minutes, and place on paper towels to drain.  Place the balls on a serving platter.  Serve with a choice of Red Pepper and Tomato Sauce, or Pesto Sauce.
