"As we graze it grows"

1/2 cup onion, chopped
3 cloves of garlic, crushed
1/4 teaspoon crushed red pepper
2 tablespoons green olive oil
2 cups canned Italian plum tomatoes, crushed with juice
1/4 teaspoon Italian herb seasoning
2 tablespoon small capers
1/2 cup fresh Italian parsley, chopped
1 lb. Squid ( Calamari ), cut into small strips or circles

In a large skillet, sauté the onion, garlic and hot pepper in the oil for 3 to 4 minutes.  Add the tomatoes, Italian herb seasoning, capers, and parsley, and cook for 3 to 4 minutes. Add the squid and cook for 3 to 5 minutes. Do not overcook the Calamari, it will toughen quickly.  Remove the mixture from the skillet and serve on a serving platter.  The Calamari will continue to cook, so remove when slightly undercooked. Serves 4.
