"As we graze it grows"

1/2 cup butter
4 one pound perch, split, or two pounds of
perch fillets
Freshly ground black pepper to taste
1 tablespoon lime juice
1/2 cup pine nuts or slivered blanched almonds
12 stuffed green olives sliced

Melt the butter in a heavy skillet. Place the fish, skin side down, in the butter.  Season with pepper. Sauté until underside is browned.  Reduce the heat and add lime juice and nuts to pan.  Spoon mixture over the fish, continuing to cook fish until it flakes easily.  Scatter the olives over all and spoon the butter mixture over to heat through.  Serves 4.
