1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
2 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil
1 medium head romaine lettuce
4 ounces hot salami, thinly sliced
4 ounces provolone cheese cut into 1/2 inch dice
In a large bowl, combine garlic, salt, pepper, oregano, vinegar, and olive oil. Beat with a fork to blend. Set aside. Discard large outer leaves from romaine lettuce. Cut remaining lettuce into 2 inch pieces, making about 4 cups of greens. Quarter salami slices. Toss lettuce, salami, provolone, and dressing together until evenly coated. Serves 3 to 4.
