2 cups large fresh basil leaves (without stems), packed tight (or spinach for a change) 2 cloves of garlic, crushed 1/2 cup Parmesan cheese, freshly grated 1/4 cup green olive oil 1/4 cup Pignoli nuts
Wash the basil leaves thoroughly and dry. Put all the ingredients into the blender and blend for 5 to 8 seconds, until smooth. Add more Parmesan cheese or garlic to taste. Serve over pasta, fish, cocktail foods, chicken, eggs, or polenta. Pesto sauce can be stored in the refrigerator with a covering of olive oil to seal, or frozen.
