"As we graze it grows"

6 trout, cleaned with heads left on
Salt
1/4 cup butter
1/2 cup soft bread crumbs
1/4 teaspoon nutmeg
1/4 teaspoon freshly ground black pepper
1/2 teaspoon thyme
2 teaspoons chopped parsley
1/2 cup dry white wine

Preheat the oven to 350 degrees.  Score one side of each trout with slashes, just through the skin, about one inch apart.  Season all over with salt. Grease a shallow roasting pan with some butter.  Combine the bread crumbs with the nutmeg, pepper, thyme, and parsley.  Spread half the mixture over the bottom of the pan.  Arrange trout in a single layer on top of crumbs. Pour wine over all. Brush trout with remaining butter.  Sprinkle with remaining crumbs and bake twenty to twenty five minutes, or until fish flakes easily, basting often.  Baked Trout serves 6.
