4 lobsters or crawfish 2 cups dry white wine Salt to taste 20 peppercorns 1 large onion, coarsely chopped 3 ribs celery with leaves 1/2 teaspoon thyme 2 carrots, quartered 2 bay leaves 3 tablespoons cider vinegar
The lobster should be alive when cooked. They should be cooked in a kettle large enough to hold them. Add enough water to the kettle to immerse the lobsters completely. Add the wine, salt, peppercorns, onion, celery, thyme, carrots and bay leaves. Bring to a boil and simmer ten minutes. Add the vinegar. When the water is boiling violently, add the lobsters. Cover the kettle and simmer exactly fifteen minutes. Drain the lobster. The lobster may be served hot with melted butter or cold with mayonnaise and lemon wedges. Serves 4.
