Chef's Daily Recipe for 08/01/02 : Lamb with Fennel, Tomatoes and Herbs

2 cups onion, diced
4 cloves of garlic, crushed
2 lbs. Leg of lamb, boned and diced
2 tablespoons green olive oil
1 cup fresh seedless tomatoes, crushed; or canned Italian plum tomatoes, crushed with juice
1 teaspoon Italian herb seasoning
Black pepper to taste
2 lbs. Fresh fennel, cut into 2 inch pieces
1 cup Italian black olives, diced
1/4 cup fresh Italian parsley, chopped
In a flameproof casserole, sauté the onion, garlic, and lamb in the oil for about 3 minutes. Add the tomatoes, Italian herb seasoning, black pepper, and fennel; cook, covered, for 15 minutes over low heat. Add the olives and parsley, and cook for another 2 to 3 minutes. If the fennel seems tough, cook it for another 3 to 4 minutes. Serve with rice. Serves 4.
