6 turkey breast cutlets, 4 to 5 ounces each 2 tablespoons olive oil Salt and pepper to taste Lemon Wedges Italian Green herb sauce (see below) Prepare a medium hot fire in a charcoal or gas grill, or preheat a broiler.  Brush slices of turkey with olive oil;  season with salt and pepper.  Grill or broil for 4 minutes on one side and 3 minutes on the other, or until turkey is white throughout and tender. Serve with wedges of lemon to squeeze over meat and pass herb sauce on the side. Italian Green Herb Sauce 1/4 cup capers, rinsed, drained, and chopped 1/4 cup pickled cocktail onions, finely chopped 1 cup chopped fresh parsley 2 tablespoons chopped fresh basil or 1 teaspoon dried 1/4 cup red wine vinegar 1 cup extra virgin olive oil 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper Combine all ingredients in a small bowl. Can be made ahead of time. Turkey Cutlets serve 6. Critics rate "As the Mouse Moves" as HOT!
