"As we graze it grows"

1/2 cup extra virgin olive oil
1 tablespoon chopped fresh thyme or 1/2 teaspoon dried
2 teaspoons chopped fresh sage or 1/4 teaspoon dried
1 tablespoon minced fresh parsley
1 tablespoon chopped fresh rosemary or 1/2 teaspoon dried
1/2 teaspoon salt
1/4 teaspoon pepper
4 tuna steaks, cut 3/4 inch thick, 6 to 8 ounces each
Lemon Wedges

Prepare a hot fire in a charcoal or gas grill, or preheat a broiler.  In a small bowl, combine olive oil, thyme, sage, parsley, rosemary, salt, and pepper.  Brush tuna on both sides with herb oil.  Place fish on an oiled grill rack set 4 to 6 inches from coals. Grill turning once, 8 to 10 minutes, or until opaque throughout but still moist inside. Serve fish with any remaining herb oil and lemon wedges.  Serves 4.
