"As we graze it grows"

1 pound tuna (1 1/2 inches thick)
1 tablespoon peanut oil
3 tablespoons crushed coriander seeds
1 teaspoon cumin seeds
1/4 cup black tea leaves
1/4 cup brown rice
1/4 cup brown sugar
1/4 cup fresh coriander leaves, chopped
3 to 4 slices gingerroot, peeled and minced
2 tablespoons (1/4 stick) butter, softened
Lemon Juice to taste

In a very hot wok or heavy skillet, heat the peanut oil, sear the tuna quickly on both sides, and remove.  Wipe out the pan and line it with aluminum foil.  Spread it with a mixture of the seeds, tea, rice, and sugar. Line a wok cover or skillet lid with foil.  Place a rack, large enough to hold the fish, inside the wok or skillet on top of the spices. Cover and heat over high heat for 5 minutes.  Place the tuna on the rack and cover again.  Turn the heat to low and smoke the fish for 10 minutes.  Remove from the heat and let sit for 10 minutes with the lid on.  Mix the coriander and ginger with the butter and lemon juice.  Garnish the smoked fish with the butter.
