6 chicken legs with thighs attached
2 tablespoons peanut oil
1 clove garlic, mashed
1 tablespoon soy sauce
3 to 4 slices gingerroot, peeled and minced
1 tablespoon wine vinegar
Hot red pepper flakes or cayenne pepper
1/4 cup dry sherry, vermouth, or chicken stock
2 tablespoons fresh crunchy peanut butter
1 tablespoon salted peanuts for garnish
Brown the legs on both sides in the peanut oil over high heat. Add the remaining ingredients, except the peanut butter and peanuts. Cover the skillet, lower the heat, and cook chicken until tender, 25 to 30 minutes. Turn the chicken at least once. Remove the chicken to a warm serving platter. Stir the peanut butter into the pan juices. Thin with sherry if the sauce is too thick. Pour the sauce over the chicken and sprinkle with peanuts. Serve hot, at room temperature or cold.
