"Spaghetti with Vodka and Caviar"

4 tablespoons olive oil
3 scallions, thinly sliced
1 clove garlic, finely chopped
1/2 cup vodka
2/3 cup heavy cream
1/2 cup black or red caviar
Salt and freshly ground black pepper
1 lb. Spaghetti or Spaghettini
Heat the oil in a small frying pan. Add the scallions and garlic, and cook gently for 4 to 5 minutes. Add the vodka and cream, and cook over low heat for about 5 to 8 minutes more. Remove from the heat and stir in the caviar. Season with salt and pepper to taste. Meanwhile, cook the spaghetti in a large pan of rapidly boiling salted water until al dente. Drain the pasta and toss immediately with the sauce. Serves 4.
