Chef's Daily Recipe for 06/17/2002 : Chicken and Pasta Salad

12 oz. Short pasta, such as Fusilli or Penne
3 tablespoons olive oil
1 1/2 cups cold cooked chicken
2 small red and yellow peppers (7 oz.)
1/3 cup pitted green olives
4 scallions, chopped
3 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 tablespoon wine vinegar
Salt and freshly ground black pepper
A few leaves of fresh basil, for garnish
Cook the pasta in a large pan of rapidly boiling salted water until it is al dente. Drain, and rinse under cold water to stop the cooking. Drain well, and turn into a large bowl. Toss with the olive oil, and set aside. Allow to cool completely. Cut the chicken into bite size pieces, removing any bones. Cut the peppers into small pieces, removing the stems and seeds. Combine all the ingredients except the pasta in a medium bowl. Season to taste, then mix into the pasta. Garnish with basil and serve chilled. Chicken Pasta Serves 4.
