Chef's Daily Recipe for 06/12/2002 : Citrus Sherbet

3 cups sugar
1 cup water
3/4 cup lemon juice
1 1/2 cups orange juice
3 bananas, mashed
1 teaspoon grated lemon rind
1 tablespoon grated orange rind
1 cup heavy cream, whipped
3 egg whites, beaten until stiff but not dry
Combine the sugar and water in a saucepan. Bring to a boil, stirring until sugar dissolves. Boil five minutes. Let cool. Add the lemon juice, orange juice, bananas, lemon rind and orange rind to the syrup. Fold in the cream and egg whites. Freeze until firm. Citrus Sherbert serves 6 to 8.
