Chef's Daily Recipe for 05/22/2002 : Cherry Compote

1/2 cup red wine
1/4 cup light brown sugar, firmly packed
1/4 cup granulated sugar
1 tablespoon honey
1 inch strip of orange rind
1/4 teaspoon almond extract
1 1/2 pounds fresh sweet cherries, pitted
Ice cream or whipped cream, for serving
Combine all the ingredients except the cherries and ice cream or whipped cream in a saucepan with 1/2 cup water. Stir over medium heat until the sugar dissolves. Raise the heat and boil until the liquid reduces slightly. Add the cherries. Bring back to a boil. Reduce the heat slightly and simmer for 8 to 10 minutes. If necessary, skim off any foam. Let cool to lukewarm. Spoon warm over vanilla ice cream, or refrigerate and serve cold with whipped cream.
Serves 6.
