"As we graze it grows"

1 1/2 pounds of fresh sole (or use frozen fillet thawed)
2 tablespoons cider vinegar
5 tablespoons olive oil
1 teaspoon paprika
1 clove garlic, finely chopped
1 teaspoon sugar
1/2 cup dry white wine
1/2 teaspoon oregano
Salt and freshly ground black pepper to taste
Flour
3 tablespoons butter
Parsley
Lemon slices

Place the fish in a flat baking dish.  Combine the vinegar, two tablespoons of the oil, paprika, garlic, sugar, wine, oregano, salt and pepper. Pour the mixture over and around the fish. Let stand in the refrigerator, turning once or twice, approximately one hour.  Remove the fish and drain the marinade, reserving it. Dredge the fish lightly in flour.  Heat the remaining oil and the butter in a large skillet. Brown the fish on all sides in the skillet and transfer to a warm platter. Pour out the cooking fat and add the reserved marinade to the skillet. Simmer until sauce is slightly thickened.  Pour the sauce over the fish and garnish with parsley and lemon slices. 
Serves 4.
