2 1/2 cups mushrooms
2 tablespoons butter
1 pinch each salt and black pepper
2 teaspoons mild paprika
3 tablespoons tomato paste
1 carton fresh cream (8 oz.)
4 quarts water
2 teaspoons salt
1 3/4 cups macaroni
1/2 bunch parsley
Rinse the mushrooms with cold water, pat dry and cut up. Heat the butter in a pan, fry the mushrooms with the salt, pepper and paprika. Stir the tomato paste into the cream and mix both into the mushrooms. Leave the mushrooms to simmer on low heat until the pasta is cooked. Bring the salted water to a boil and drop in the pasta to cook for 8 minutes or as directed. Drain the cooked pasta in a colander and mix with the mushrooms in a heated serving dish, sprinkled with chopped parsley. Serve with grated Parmesan cheese.
